Pomegranate Hazelnut Holiday Salad

with bacon dressing — Adapted from Lauren’s Latest










Let me tell you, this salad was incredible and super easy to make! It is perfect for the holidays and a very unique dish that will sure to make an impression. The combination of the tangy yet sweet and juicy pom seeds along with the salty bacon and crunchy hazelnuts is a perfect blend of flavors. Add the warm bacon dressing and you get one sensational culinary experience.

The ingredients are:

  • A bag of mixed greens
  • 1 Pomegranate
  • 3/4 C toasted hazelnuts
  • 8 slices bacon
  • 2 T. Light Corn Syrup
  • 2 T. Balsamic Vinegar
  • 3 T. bacon grease


1. Cook Bacon in skillet. While bacon is cooking peel pomegranate and remove seeds.

2. Mix together greens, pomegranate, toasted hazelnuts, and crumbled bacon.

3. In a small bowl take bacon grease, corn syrup, and vinegar and whisk together.

4. Add salt and fresh cracked pepper to salad and toss with dressing.
