Taco Night

Today was Taco Night in our house. My sister made shredded chicken and my brother and I made homemade guacamole. We added lots some yummy sides and toppings for the tacos that made it a memorable meal.

Taco Chicken:

Ingredients:

  • Frozen Chicken Breast
  • 1 Jar of salsa

Add frozen chicken breast and salsa to the crock-pot and cook on low for 8 hours. That’s it! Super simple and easy.

Rebe's Mexican Chicken

After the Chicken cooked all day, my brother and I made some guacamole. We love us some guac in our house. Here is our recipe:

Ingredients:

    • 4 Ripe Avocados
    •  2 Cloves of Garlic
    • 1/2 Small Red Onion
    • 1/2 Lime Juice
    • 1 Diced Roma Tomato
    • Salt and Pepper to Taste
    • 1 T. Light Mayo.

Directions:

  • Slice avocados in half, remove pits and take the fruit out of the skin and place into bowl.Finely chop the garlic, onion, and tomato and add to the avocados.
  • Add in a squeeze of lime juice, salt, pepper, and mayo and mash together.This is what the guacamole looks like before it is mashed together.

After we had the chicken and guacamole all made up, it was time to assemble the taco-making station. We had three types of tortillas, Flour, Crunch Corn Flats, and Whole Wheat. We also had re fried beans, tomatoes, sour cream, 2 types of salsa, red onion, and of course cheese!

Taco Line

This meal was so good and the best part is that it can be catered to individual tastes! My sister made a quesadilla, my brother made 3 “Double Decker Supremes” alla Taco Bell and I piled mine on top of a tortilla flat. Man was it yummy
