Blueberry Oatmeal Muffins:
These muffins are not your ordinary muffins. Packed with oats and fruit, you would never guess these muffins are gluten free, fat free, and vegan with no added sugar! I whipped up a small batch of these muffins to have for breakfast or a healthy snack. They literally took 5 minutes to prepare and only 20 minutes to bake. I had to try one for dessert and they are incredible. These muffins remind me of banana bread, blueberry pancakes, and oatmeal all in one bite. The best part is that they are sweet with no added sugar.
- 1 ripe banana, mashed
- 1/4 cup blueberries
- 1/4 cup chopped dates
- 1/2 cup rolled oats
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp baking soda
** Feel free to experiment with flavors by adding your favorite fruit or nuts.
- Preheat oven to 350 degrees. Spray muffin tin with non-stick spray or line with cupcake liners.
- In a bowl, mash the ripe banana with a fork.
- Add in all other ingredients and mix until well incorporated (if too dry, try adding milk).
- Pour into muffin tin and bake for 20 minutes at 350 until done.
